This is a Japanese-ish lightly marinated miso cod. This is the lighter side of the famous Nobu Miso Cod that has made it’s way around the interwebz and then some.
Miso Cod Ingredients
- 2 medium cod fillets (about 1 lb). They are generally a 1/2 inch thick. I like using cod due to its buttery finish.
For the marinade:
- 1/2 c. sake
- 1/8 c. sweetened mirin
- 3 tbl. white miso paste
- 1 tsp. of sugar
- 1 tsp. lemon zest
Take the mirin and sake and bring it to a simmer. Then kill the heat and add the other ingredients. Whisk it around until everything is totally blended. Cool to room temperature. Plop the fish in the marinade or cover the fish with the marinade. Get it.
Marinate for 12-24 hours.
Cooks note: I like to taste my fish. I also don’t want that many empty calories or salt in my marinade. You will notice how this Miso Cod recipe differs from many others online. You will be surprised at the subtle, yet pointed taste. I enjoy this much better than the Nobu recipe that has been made hundreds of times. It marinates longer but has less salt and sugar.
