It makes a hard man humble..Was that too easy?

I was in Thailand for over two years cooking, eating, drinking, and eating some more. It was definitely glutinous but oh so good and educational especially coming off of a five year intense work schedule. Bangkok will make a hard man humble. Both gastronomically and psychologically. Definitely one of my all time favorites as the food is relatively easy to make (hard to procure from the USA) and usually kills it on all points of your tongue. It’s my guiding light.

This is my take on a mind blowing grilled chicken I had when I was in Bangkok. No it was not street side, nor was it at some “cafeteria” stall or at some fancy “hi-so” hangout. It was deep in the recesses of a Mall which is not that surprising if you have been to Bangkok.

What I have done is come up with a mixture that speaks freshness and shouts flavor while keeping the spice and salt properly in check, well, at least for the non-Thai. I like fish. If I didn’t, I would not eat it.
